Simplenote

Of all the note-taking apps I have tried and really used, I believe Simplenote doesn't get a lot of credit or mention. I have been using it a lot the past few months. Probably because is the only nice-looking app that has a Windows native app ish. The syncing between the windows app and my Apple devices it's pretty damn solid. It does not have a lot of bells and whistles but it works great for what I need. Of course, there are a few things I would like it to have from other note-taking apps I've used but I can live without them.
